Green Apple Smoothie Recipe (Vegan/Gluten Free, with a Top 8+ Free Option)

Hello, everyone! Today I am going to share with you one of my all time favorite smoothie recipes. This recipe is so sweet and tasty–you would never guess there are veggies hiding in it! Not only is it delicious, it is also vegan, gluten free, and can be Top 8 Allergen free by using a Top 8 Friendly non-dairy milk.

I make this with coconut milk, but you could make it with any non-dairy milk you like.

The key to success when making this, is using pure pressed apple juice. You can make this with regular apple juice, but cold pressed apple juice definitely takes it up a notch.

When I make this, I usually make a large batch, so that there is plenty to share, but I have included a recipe for a smaller serving size as well. If you are making this only for yourself, I recommend going with the “small batch” recipe. If you will be making to share, or want to make a few days worth of smoothies, than you will want to go with the “large batch” recipe.

Green Apple Smoothie (Large batch)

*Makes 3-4 servings

Ingredients:

-1 cup frozen peeled apple slices

-1/2 cup frozen mango

-1 cup coconut milk

-1 1/4 cup Pure Pressed Apple Juice

-2/3 cup fresh spinach leaves (if you like a lot of spinach in your smoothies, go ahead and add more–I often do)

-1 small ripe avocado, peeled and pitted

1.) In a blender, combine apple slices, mango, coconut milk, apple juice, spinach, and avocado. Blend until smooth, and serve immediately.

*If smoothie is too thick, gradually add more juice and/or milk until you have reached your desired consistency

Green Apple Smoothie (Small batch)

*Makes approximately 1-2 servings

Ingredients:

-1/2 cup frozen peeled apple slices

-1/4 cup frozen mango

-1/2 cup coconut milk

-3/4 cup Pure Pressed Apple Juice

-1/3 cup fresh spinach leaves (if you like a lot of spinach in your smoothies, go ahead and add more–I often do)

-1/2 small ripe avocado, peeled and pitted

*If smoothie is too thick, gradually add more juice and/or milk until you have reached your desired consistency.



Variations:

  • For a quick energy+antioxidant boost, add a bit of Matcha powder before blending (up to 1/2 tsp for the small batch recipe, or up to 1 tsp for the large batch). Note that this does add caffeine to an otherwise caffeine free recipe.
  • For less sugar, decrease the amount of apple juice, as desired. If you do this, be sure to increase the amount of non-dairy milk you use, to prevent your smoothie from being too thick. If limiting sugar is a concern for you, you may also want to be mindful of the sugar content in the non-dairy milk you choose. Look for an unsweetened variety, as many contain added sugars, and some are naturally very sweet.
  • For a lower-cal option, consider a lighter milk option, such as light or unsweetened coconut milk. Rice milk is also a low calorie option.
