Today I am going to share with you one of my all time favorite salsa recipes. This recipe is gluten-free, free from the Top 8 Allergens, and vegan.
While I wish I could take credit for this recipe, this stellar recipe was created by my mother (hence the recipe title: “Mom’s Best Salsa”). She often serves this salsa with tortilla chips and/or gluten-free crackers before holiday celebrations, and other family gatherings. It really is delicious!
One of my favorite things about this salsa, is the fact that it is so incredibly colorful. This is the direct result of using a colorful assortment of fresh peppers, two types of onions, and freshly chopped cilantro.
When you make this, an important thing to remember is that you do not want to over cook the ingredients. Rather, you should cook them just long enough to warm the salsa, and soften the veggies a bit.
As written, this recipe makes about 10 servings. When we prepared the batch in the photo above, we doubled the recipe (we were serving a lot of people). This recipe is very easy to halve of you need to feed fewer people, or double if you need to feed more. It may be necessary to increase or decrease cooking time if you do this, though.
Now, without further ado, here is my mother’s BEST salsa recipe! Enjoy! 🙂
Mom’s Best Salsa
*Makes approximately 10 servings
Ingredients:
-2 bell peppers, seeded and finely diced
-2 banana peppers, seeded and finely diced
-1/2 of a red onion, finely diced
-1/2 of a yellow onion, finely diced
-1 (14.5 oz) can of petite diced tomatoes, drained
-1 jalapeño, seeded and finely diced (use less if you do not want your salsa to be spicy)
–1 Serrano pepper, seeded and finely diced (Again, you may use less if you do not want your salsa to be spicy)
-1/4 cup finely chopped cilantro
-1 tablespoon chopped garlic
-1 1/2 tablespoons apple cider vinegar
-1/2 teaspoon salt, or to taste
1.) Add all ingredients to a large pan, and stir to combine. Heat over medium heat for ten minutes, stirring occasionally. Remove from heat.
2.) Chill before serving.
